Deep-Dish Blueberry Pancake


Hi my crafty friends!!
If you've been following my blog you know that I have a wide variety of 'crafts' that I do.  I love to scrapbook, cook, paper create, dabble in sewing...etc.  The list, like many of yours,...goes on and on.  :)  Well I had a cooking spree on Sunday.  :)  I NEED to share these recipes with you because they are that good!!!  Loved, loved, loved them!! :)
Breakfast:
Deep-dish Blueberry Pancake
Dinner: (later this week)
Fajitas with marinated flank steak
Dessert: (later this week)
Peach/Blueberry Cobbler

Wow...we were eating good in the neighborhood for sure!!!!!!!!!!!!!!!  :)





Deep-Dish Blueberry Pancake:
2 T Butter (melted or at least softened)
5 eggs
1 C flour
1 C milk
2 t vanilla extract
3 T sugar
1/2 t salt
1 t baking soda
1 C blueberries

Preheat oven to 425'.  Spray baking dish (I used 1.5 qt) with Pam.
In baking dish wisk eggs until frothy and then add the remaining ingredients, except blueberries.  Mix until free of lumps.

Top with blueberries.

Bake for ~35 mins until toothpick inserted into the center should come out clean.  Serve with powdered sugar.

This comes out the consistency of a quiche or a sturdy flan or pudding.
It was DELISH!!!!!  I made it in a 1.5 quart container and it made 4 healthy slices.  Next time, I may double it.  :)

  2. Looks delicious. I have a blueberry bush and I watch it everyday to see if they are ripe yet. I am waiting patiently, but I am eager for some Blueberry Buckle.
