Foodie Friday....Ham and Beans - crockpot style!

Hi, hi, hi!!!! What great comfort food is this?!?! WOW! I love ham and beans and thought I'd share this basic recipe. It's so yummy and you can add jalapenos, chilies, hot sauce, whatever you like but my family devoured it just like this.

Ham & Beans (Crockpot!)
1 large glass jar white northern beans
diced ham (about 1 pound), great for leftovers!! Bone-in is even better if I have it.
1 chopped onion
6 cups water
3 cubes chicken bouillon
salt & pepper to taste

Put everything in crock pot cover and cook on low about 8 hours. Serve with cornbread- we like Jiffy. I use two boxes and add a drained can of corn to the mix before I bake it in an 8x8.

I usually put sour cream and shredded cheese out to put on top of beans

Spa Party Paperbag Mini

Hi y'all!! I think I told you about a spa party that I put together for my daughter and her friends late last month, well to finish it off I made each of the girls a paperbag mini to remember the occasion! It was a lot of fun and I can't wait for Kaity to give them to them! :)

It was SOOO much fun to have and fun to make these minis too!!! :) Kept me busy for a while!

My daughter loves anything Parisian. I am just sure she will go one day and LOVE it!!! I was doing some online shopping (again!) and found this really neat embosser/stamp set. Kinda cool! I like how it turned out and I'm sure she will too!

Foodie Friday - Marinated Skirt Steak

OMG....
I have just became a HUGE fan of Plain Chicken. You need to check her out...she makes great recipes and they are anything but plain!!! She loves to grill out and most of the time it is chicken, but I adapted one of her skirt steak recipes and it was Delish!!!

Marinated Skirt Steak

1/4 cup balsamic vinegar
1 tablespoon soy sauce
2 T olive oil
4 garlic cloves, minced
2 pounds skirt steak

Combine first 4 ingredients in a large zip-top plastic bag. Add steak, turning to coat; seal and marinate in the refrigerator overnight, turning once. Remove steak from bag; discard marinade.

Broil 5 minutes on each side. Let stand 5 minutes. Cut steak diagonally across the grain into thin slices.

Gave great energy to my cheerleader!!! :) Go Chargers!

Baby Boy Mini

Hi to my crafty friends! :)
I am getting a kick out of making minis!!! I think I will have another to post this week as well!! :) This one is for one of my really good friends who is having her second baby, but her first baby boy! :) His name will be Finn, isn't that cool!?! Anyway...life has me very busy right now. I am enjoying it (mostly) but WoW! I'm a bit overwhelmed. Sorry I haven't been posting so much, but the minis take a MUCH longer time than simply making the simple cards I tend to do. :) I'm sure you understand. :)

Foodie Friday - Hot Chocolate Cuppies!

Hi y'all...
I was over looking at My Pink Stamper's blog and she had a recipe for Hot Chocolate Cupcakes. Sounds good, right?!?! And with this cold weather I thought it was perfect. I halved the recipe and it made 12 perfectly. I used egg beaters so 1 1/2 eggs was no problem tha way. I thought I'd do a cream cheese frosting, but then I thought that I should try to do somethig with marshmallows!!! SO, I tried something. My oven usually takes a few minutes longer than recommended so at the 16 minute mark I put some mini marshmallows on top of four of the cuppies and put them in for four more minutes. They turned out beautifully! :)
YUMMY IN MY TUMMY!

Hot Chocolate Cupcakes

2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 eggs
1 packet Hot Chocolate

3/4 cup milk

3/4 cup vegetable oil
1 tsp vanilla extract

Preheat oven to 350 degrees and line muffin pans with cupcake liners.
In bowl of stand mixer combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda and salt.
Add wet ingredients to dry ingredients: eggs, hot chocolate/milk mixture, vegetable oil and vanilla.
Beat on medium speed until well combined, scraping down sides of bowl as needed.
Fill cupcake liners 2/3 full with batter.
Bake for 16 minutes or until toothpick inserted in center comes out clean.
Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling

Look at what Mikey came home with from Hobby Lobby!!!! He set it up so when I got out of the shower I would see it! How sweet!! I will hang it by our picture in the family room, but I just thought that was the sweetest thing!!! And why would I not go with him to HL you may be thinking?!?! Well, because I spent my budget and knew going would not be a smart thing for me. It's cute that he wanted to go becasue he too started a hobby, one that he had done years ago...Model making!!! He is an army brat and grew up in Germany/Belgium and he still loves army things. He found this plane and with a 40% off coupon, it was a steal at $13! We did that on a trip together...this trip? Well for more PAINTS, of course!!

Hi all!! Love this stamp set from My Cat's Pajamas and I used a new embossing/stamp set that I just ordered. Kinda neat. They are made to fit perfectly together. I used kraft paper and like how it turned out. Added a little ricrac and raised the cat a bit. Basic and simple but neat at the same time....I like it! :)

Star Wars Mini

OMG!!! This was SOOOOO much fun to make! Mike, my BF LOVES Star Wars. Kinda ironic becasue I have never even seen it. Don't really have any interest in most things sci-fi. But, it's cool that he likes it so much and has loved it since his childhood! He still has some stuff from when he was a kid and don't get twisted....he still gets new stuff too! One really cool thing that I got to use on this mini was bedsheets from his twin bed he had as a kid!!! So cool!!!! :)
This was so enjoyable to make and I have collected embellishments for a couple of years now. I thought a card or layout just wasn't what I wanted. The mini ws perfect!!!!
I cut the pages 6x6 and I did the binding like a book to make all of the pages fit and for it not to be too bulky. Although it is quite bulky and I used a Tim Holtz thing to close it. I love how it turned out!!! It is an interactive mini and definatly hands on!
LOTS and LOTS of pictures!!!!

Foodie Friday...Chicken and Potatoes

Hi y'all!! Foodie Friday again and Chicken again! :) And it is similar to a past Chicken and Veggie post of mine. But it's easy and yummy! From start to finish it took me less than an hour and I felt like it was very nutritious and homemade! YAY!
I adapted this recipe from a foodie blog...Plain Chicken, please check her out you - she's cute and fun and has delicious ideas!!!

My family loved this and can't wait for me to make it again!!

Braised chicken with potatoes

21/4 pounds bone-in, skin-on chicken thighs
Coarse salt
1 tablespoon extra-virgin olive oil
11/4 cups chicken stock
12 ounces baby fingerling potatoes or halved small potatoes
5 garlic cloves, smashed and peeled
2 t rosemary

Preparation

Preheat oven to 450°. Season chicken with salt. Heat a large, heavy ovenproof skillet over medium-high heat. Swirl in oil. Cook chicken, skin side down, until browned, about 5 minutes. Flip chicken. Add 1 cup stock and 1/2 teaspoon salt. Add potatoes to liquid. Bring to a boil. Add garlic, and rosemary to liquid.

Transfer skillet to oven. Roast, stirring potatoes halfway through, until potatoes are tender and chicken is cooked through, about 30 minutes.

Serve immediately.

Serving Size

Makes 4 servings

I enjoy this stamp. Very. Much. I like the simplicity and even the fact that she doesn't have a real face. I don't know...I just think it's an adorable stamp. I tried to keep it simple. Maybe that is what I should try to do all year. ??? We'll see how that works out.

Foodie Friday - Sausage Rollups

Hi all!! Foodie Friday again. :)
Today, I want to share a super easy, super delicious appetizer recipe that my BBFF, Christy had on her blog. Appetizer: Sausage Roll-Ups. I made these the other night and my fam loved them!! All you need is two cans of crescent rolls and one tube of sausage.

Flatten the crescent rolls out on a cookie sheet. It's easy to keep them in a rectangle, just close the seams - they come out of the can with 4 stuck together - put 1/4 of the sausage on each of the rectangles and roll the long side toward you. Then slice into about 1 inch pinwheels. Bake about 20 minutes at 350. EASY! AND YUMMM!!! This makes a bunch too!

Spa Party

Hi my crafty friends!!!
Oh what fun this is!! My daughter is having a Spa Party on the 28th so we are getting some decorations done! It's a lot of fun. I made these invitations using the Slumber Party cartridge and made "appointments" for all of the girls to come for facials, mani's and pedi's! :) It will be a slumber party too, so I am sure I will have pictures to show of the fun!!! Stay tuned! :)
I decided to also put each girls name on the invite....I LOVE it!!!

Shuttle Fun

Hi my crafty friends!!! I have been watching a lot of tutorial videos on mini-albums. Combine that with a great trip to Florida in December with someone on my team who just happens to love all things space and the fact that the Kennedy Space Center is on the way to the airport from our oceanfront hotel makes for a really fun mini!!
I really had fun making this album and there are tons of pictures. I made an envelope mini and even made the envelopes with the cricut! I also used my Zutter for the first time!! Cool way top bind up the album!!
Thanks for looking and more pictures to come on the second album I made!! This one is for Danny, the next one you see will be for me! :)
I am also positive some cute beach pictures will also be scrapped! :)

Foodie Friday - Spaghetti Soup

YUM!!! What a hit this was!!! I found a similar recipe online but switched it up a bit and made it even better (in my opinion!) AND made it easier!!

Spaghetti Soup

5 cups low sodium, fat-free chicken broth
2 chopped cloves garlic
1/2 onion, chopped
1 jar chunky spaghetti sauce
pinch crushed red pepper flakes (optional)
kosher salt and fresh pepper
package of precooked sausage crumbles (I used the soy kind and no one knew!)
approximately 1/2 box of broken spaghetti - picture below of what I used

Directions:

In a soup pot over medium heat, bring all ingredients excpet noodles to a boil; simmer together for at least 5 mins but for as long as you want...I had mine on for about 40 minutes. Add broken noodles and cook until they are done tor your liking - took about 10 minutes for me. I sprinkled with Parmasean cheese. Would be great with garlic bread too!!

Broken Ankle :(

My poor boy!!! We have a new place in town called Sky Zone (check out you tube for some cool videos!) it's all trampolines. Even on some of the walls! Very cool! Alos very dangerous...especially the dodgeball floor. Lots of places for a foot to fit and that's just what happened. Luckily no surgery was needed. Too bad he's out for the rest of his bball season and maybe even the start of rugby. Ugh. :( But he's a trooper and doing very well - even if he's a bit gimpy. :)
Here he is the day it happened...oh it was at a bday party too!!! Poor guy didn't even get cake...but the party mom brought him his own pile of brownies the very next day!! :)

Basketball Bookmark

I love this kind of card! I know I posted about these before but you take a 4.5x12 piece of cardstock and score at 4.5" and 9" and you end up with a 4.5" square card and a 3" bookmark! I leave the bookmark on the card and use a perferating tool so that the recipient (in this case my DS) can just tear it off and put it to use!

Being basketball season in Indiana, I really love this card!

Foodie Friday - Parmasean Chicken

WOW!! I found this recipe on Pinterest too but I can't find it now.
Luckily, it was pretty easy and I remember how to do it....

Parmasean Chicken Casserole - it's so easy and YUMMMMM!
coat 9x13 with 2 T oil and 2 cloves garlic
cover with chicken breast - about 5
coat with 1 jar of spaghetti sauce and mushrooms if you like - I like!
add 1 C of mozarella and 1 C of parmasean
Top with 1 5oz bag of garlic croutons
top with more cheese - another cup of each should do it.

Bake at 350' for about 45 minutes.

Foodie Friday - 7Up Biscuits

Another Recipe found on Pinterest....LOVE me some Pinterest!!! These biscuits are AMAZING!! Buttery goodness!

7UP Biscuits

2 c Bisquick mix
1/2 c sour cream
1/2 c 7up
1/4 c melted butter
Preheat oven to 450º

Cut sour cream into your Bisquick mix, then add 7up - it will make a soft dough. Now sprinkle your counter with a little Bisquick mix then add dough and pat it out.
Melt butter and pour it into a 9" square baking pan. Cut your biscuits up and arrange them in pan on top of melted butter.
Bake 12-15 minutes or until golden brown.

I don't know who's more excited...me or them. Okay, yes I do. It's me! :) I made these for my daughter and her bestie. I know it's only returning after winter break, but still. It's going to be nice to get back into the routine. If I could be a SAHM I may feel differently but I hate going to work when my kids are home. Don't like it one bit.

I used whole red potatoes that I boiled and then sliced. Then I added a handful of bacon bits (the real kind), about a cup of sour cream, a cup of cheddar cheese about 1/8 C ranch dip mix. Mix it all up and bake it at 350 for about 40 minutes. WOW!! :) You will like them!

WOW! These rolls are amazing! And they truly are quick to make. I have not had a lot of luck with rolls, but I made these for Turkey day and I've made them twice since AND I plan on making them for Christmas. You've gotta try them!!! If I can do it, you can too! 30 Minute Rolls
Printable Recipe
1 C plus 2 Tbsp warm water
1/3 C oil
2 Tbsp yeast
1/4 C sugar
1/2 tsp salt
1 egg
3 1/2 C flour
Heat oven to 400 degrees.
In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour. Knead with hook until will incorporated and dough is soft and smooth. (Just a few minutes)
Form dough into 12 balls and then place in a greased 9 x 13 pan and allow to rest for 10 minutes. Bake for 10 minutes at 400 degrees or until golden brown.

Foodie Friday - Bangin' Good Shrimp

WOWZA!!!! This is some good shrimp!!!! I found some copy cat recipes for Bonefish Grill's Bang Bang Shrimp but I didn't have the ingredients for the healthy version so I made my own.

This is what I used. I may double the sauce mixture next time, though.

1 pound shrimp - cleaned

1/2 pound scallops

4 green onions

1/4 C low calorie ceaser dressing - my grocery sells a "no calorie" ceasar that is actually pretty good. I used that. It is with the healthfood stuff.

2 T reduced fat mayo

4 shakes of soy sauce

1 t red pepper flakes

1 T thai red curry paste

Rice Noodles

Saute the seafood in a wok - or have your BF do it, that's what I did while I mixed the dressing, curry, mayo, soy, and pepper together in a bowl.

The noodles were really easy, just covered with boiling water ans let them sit for 3 minutes. They were really long though and I needed to cut them.

I Once the shrimp was done we added the sauce to coat. (I used it all - next time I may double!!)

Then put that over rice and topped with cut green onions.
This was truly enjoyed by all!!!!

Red Neck Wine Glasses - Happy Birthday, Bro!

Foodie Friday Hot Cocoa!!!

Hi Foodie Friday Friends.... :)
I thought I'd share this Hot Cocoa mix with all of you and also a cute packaging idea for gift giving! I sent this to my BFF who lives in the bitter cold state of North Dakota! Boy it gets cold there! :)

This recipe was given to me by a friend and it makes a BUNCH!!! Good thing too becasue it is DELICIOUS!!!

Hot Cocoa Mix -

I bought all of the ingredients at Sam's and really don't know what size they are...But

1 container Nesquick

3/4 container powdered creamer (I just dumped the other 1/4)

1/2 package powdered sugar (I think it is 5 or 7 pounds!)

I used an unscented NEW garbage bag to mix everythig in and then clipped a hole in the bag and poured the mix back into the containers...you will need more though so be prepared. My friend said that she used the whole container of creamer, so you could do that too - I know my family likes it chocolately. This comes out smooth and creamy. Delish!! :)

I made some of these last year, but this year I made one for the HOME team! GO COLTS!! I know they aren't doing too well this season but oh well! Gotta support the home team! I found this cute horseshoe using my gypsy - it's amazing how much I use search to find that I actually own a cartridge that has whatever design I am hunting for!! The downside is that I have no idea which cartridge it is on. I used a sample piece of turf from Menard's and cut it and hot glued it to make it fit around a bottle.

Got the idea from Greenbean last year and made some then too!

Hi my crafty friends!
I found this really cute frame that is perfect for my SIL. She loves lime green and this would match one of the rooms in her house. SO I picked it up. I noticed that it conveniently had 8 frames. I imediatley thought of something I'd seen here on or pinterest and knew I'd have to make this! She has two girls so no doubt her evenings are getting filled. This is a great way to keep track of what is going on day-to-day! I am giving it to her for Christmas, so SHHHH.... don't tell. LOL! :)

I used my Cricut to cut out the letters and then I used scapbook paper that I cut to 4x6 to fit the framse. I glued the pink words onto the paper and framed the paper. A dry erase marker is all that's needed to complete the present! I found a package of 2 at the Dollar Store! :) SCORE!!! :)
I hope she likes it! I think I would! :)

Foodie Friday! Crockpot Chicken and Dumplings

Hi all!!

Okay, I know this picture is kinda crummy, but this recipe is DELICIOUS!!! Who doesn't like chicken and dumplings??? :) Well, don't tell me if you don't because they are one of my fave comfort foods! I enjoy them occasionaly at Bob Evans with a side of mashed potatoes....YUM! Well, these are yummy too and the only thing that is missing is the mashed potatoes, but they didn't even need them and this way I was able to keep them skinnier!

I modified this recipe from a website I found http://www.skinnycrockpot.com/chicken-and-dumplings-1/ How great is that! Skinny AND Crockpot!!! WOW! It is great!

Check out their pictures - they are far better than mine!!!

I also did NOT make my own dumplings and their recipe is healthier than mine but mine served 8 and had about 325 calories/serving (rounding up!)

Crock Pot Chicken And Dumplings

Ingredients

1 1/2 T Better Than Broth Chicken flavor
4 C hot water
4 boneless, skinless chicken breasts
3 T butter
1 medium onion – peeled and diced
4 large carrots, peeled and sliced
2 stalks celery, cleaned and sliced
1 can of cream of chicken soup - Campbell's Healthy Heart
1can of cream of mushroom soup - Campbell's Healthy Heart
1 can biscuits - Reduced fat version

Directions

Put chicken broth paste in crock and cover with hot water. Mix to dissolve broth
Add both cans of soup, butter, onion, carrots, and celery. Salt and pepper to taste
Add chicken - put breasts in whole - they will fall apart when done!
Let cook on low 8 hours

This is going to smell really good !!

About an hour before it's done you will add biscuts! - or after it's cooked 8 hours, it really doesn't matter, but you need the biscuits to be added at least an hour prior to serving

7-8 hours in, Take 2 forks and shred the chicken. It will look a bit 'soupy' but that is okay!
open your can of biscuits and flatten biscuit a bit with your palms. Break into bite sized pieces and toss into crockpot
When all biscuits are added, stir mixture to cover biscuits the best you can - they will rise to the top.
Cover and cook in crock for an hour or until biscuits are done in the middle.
The biscuit dumplings will look a little odd after they have been cooking at the. They create a sort of “crust-like” cover. Just break them up with a wooden spoon.

Minnie Nails!

Hi my crafty friends!

Kaity and I enjoy getting our nails done, but let's face it, it's expensive!!! She had seen nails done like this on a blog and I thought "I can do that!" so I did! :) Love it when that happens. Now mind you, there are flaws, but it's nails for goodness sakes! And she's 13...so it's all good! She was happy and so was I! It was even more fun because red, black, and white are her school colors! I just free-handed the red which was the hardest part. I know they could have been a little straighter, but it worked and I used a small make-up brush with remover on it to help straighten out the lines a bit. I then took my embossing stylus - YAY!!! - and dipped it in white for the dots and then black for the bow. Pretty cool and pretty easy to do!
We think they turned out super cute!

Coq au Vin in the Slow Cooker

Ingredients:

4 boneless chicken breasts (would have been better to leave bone in)

2 teaspoons herbs de Provence (no idea what this is so I used rosemary)

1 teaspoon garlic powder

½ teaspoon salt

1 teaspoon freshly ground black pepper

3 cups pearl onions, peeled* (I did this but should have just used regular onions or frozen pearls)

8 ounces mushrooms, sliced (next time, I will leave whole)

3 carrots, sliced (I used baby carrots and didn't cut them)

1 cup dry white wine (I used two cups...don't judge)

1 cup sodium-reduced chicken broth

3 tablespoons tomato paste

Method:

Place chicken in slow cooker that has been sprayed with cooking spray.

Season with herbs de Provence, garlic powder, salt and pepper.

Add onions, mushrooms and carrots.

Whisk together in a medium bowl the wine, broth and tomato paste.

Pour over chicken and vegetables.

Cover and cook on high for 5½ hours or on low for 7½ hours.

Serve over egg noodles or with mashed potatoes. (I didn't do this)

4 servings

Okay, that picture is not mine because I forgot to take one. Boo...but this smelled DELICIOUS!!! and tasted even better!

I also didn't serve it over the noodles or mashed potatoes. I'm sure it would be great that way, but I'm counting calories and it really didn't need anything!!

Tile Coasters

Hi my crafty friends!! :)
I made these awesome tile coasters for my friend at work and I thought I'd show them off to you all to give you a great idea for Christmas. I have made coasters before, but never PICTURE coasters. Thanks, my bbff, Christy for giving me the idea!!!
They are pretty easy. All you have to do is modge podge the picture to the tile, then spray a coating on the top. I bought mine at JoAnn's and it was a little pricey, but it is waterproof. I liked that since they are going to be holding drinks afterall.
I just tore the edges of the picture to give it kinda a neat effect.
You can see from the photos that they look a little aged. that is a cool effect that I got from spraying closely. I actually redid the little girl one because her face looked distorted. I like the effect but held it far away the 2nd time I made hers. A cool thing though is that now her tile looks like it has a double edge around the picture. That is pretty neat. I wonder now if I shouldn't have done that to all of them. Oh well, he liked them!!!!

You've been Framed

I'm thinking it's time to start posting some gift ideas. So today that is jsut what I am going to do. How about a cute frame idea!?! Everyone loves pictures for Christmas, right?! RIGHT! And who wouldn't like it even better with a cute frame???
I used Twinkle Toes to do this frame....I think it turned out really cute along with the baby girl in the picture. She's a daughter of a friend of mine. My friend took some family photos for me and I wanted to give him a little thank you gift. Guess it really was for her, but you get the picture. (Bad pun!)
This frame is from Michael's and then I covered it with modge podge and scrapbook paper. She is very girly and I love that about her. Her fave colors are pink and purple. I think it turned out cute and I know my friend appreciated it!

I made one for his son as well....I'll post on that tomorrow! :)

Be careful when you are working on this...the modge podge kinda wrinkles, but it will straighten up when it dries.

You 'CAN' do it!

Hi all!!! This project was so much fun to make and to GIVE!!! I re-purposed a can! I used a can of green beans. All you do is instead of pulling the top off (leave that for the recipient) you use a can opener (the kind that makes a smooth cut) and cut the top off. Then wash the can and fill with goodies. In this case we have crackle nail polish and zebra nail stickers! :) Fun!! Then you decorate and superglue the lid back on. No one can even tell that the can was opened! It is so much fun! I did this one for my BFF's daughter who recently turned 14. Happy Birthday, sweet girl!

Snickerdoodles!!
Recipe from Allrecipes.com

Ingredients

1 1/2 cups white sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
2 eggs
2 3/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons white sugar
2 teaspoons ground cinnamon

Directions

Preheat oven to 400 degrees F (205 degrees C).
Combine 1 1/2 cups white sugar, butter or margarine, vanilla and eggs. Mix well.
Stir in flour, cream of tartar, baking soda and salt. Blend well. Shape dough into 1 inch balls. Combine 2 tablespoons sugar and 2 teaspoons ground cinnamon. Roll dough in sugar/cinnamon mixture and place 2 inches apart on ungreased baking sheets. Bake 8 to 10 minutes or until set. Immediately remove from cookie sheets.

Get Better Bouquet

One of my son's friends got hurt while playing football. Poor kid thought that maybe his knee was blown. Turns out it was just a deep bruise thank goodness!!! Alex wanted to help make him feel better so I made him a candy bouquet. I did the popcorn theme thinking that he was going to have to stay in bed for a bit but that tough cookie was walking around the very next day!!!!
Amazing!
I also made the band-aid card using the Wild Card carty! Love it!

Zebra Nails!

Have you tried the new Sally Hensen product for nails?!?! It's like a sticker but lasts for days!!! Kaity, my DD, love animal print. ESPECIALLY zebra so when I saw this I knew we'd have to give it a whirl. It was a little bit difficult to work with, but not too bad and the smell was yucky, but other than that it's pretty cool. I'd give it two thumbs up! I didn't think they'd stay on for more than a couple of hours...but they've lasted a week so far! :)

Dough Ingredients: 1 T. yeast (I used a package), 1 12/ c. warm water (follow packet instructions on temperature), 1 1/2 T. sugar, 1 t. salt, 4-5 1/2 c. flour, 3 T veg oil, 1 egg yolk
Spread Ingredients: 1/2 c. butter, 1 1/2 T. garlic salt (reduce if you don't love garlic as much as I do...it's powerful), mozzarella cheese (about 1 c., shredded)
Dough Instructions: Combine yeast, sugar, water, and stir. Let sit until bubbly. Add salt, oil, yolk and mix. Add 3 c. of flour and mix. Add 1 more cup, mix. Add up to 1 1/2 cup more until dough is barely sticky to fingers (I only need 4 1/2 c.) Knead 2-3 minutes. Cover and let rise 1 hour.
Roll dough out onto a board sprayed with cooking oil (like Pam).
Mix butter and garlic salt, and spread over the rolled dough.
Sprinkle cheese on top.
Roll up (like you are making cinnamon rolls).
Slice into 18 pieces. Let these rise for 20 more minutes while the oven is preheating
Bake at 350 for 18 minutes.
Enjoy but be careful because you will want to eat them ALL!!!

My daughter is a cheerleader for her Jr. High and they are the Chargers. I made them these cute cuppies and toppers to have as a treat before one of the games and I also gave them these pencil holders cut with my Cricut - I will post those soon. How cute, fun and easy!

Happy Birthday! I find it difficult to do masculine cards sometimes, but I really like how this turned out! I actually gave this to my boy last month, but realized that I hadn't posted it. This is the only card I've ever done like this, but it was pretty fun and I think I will do more. This is called a T-slder card. Basically you make a T out of cardstock adn that is what pushes the top flap up and the shows the suprise inside! I got the instructions online at SplitCoast Crafter. Check it out!!

I made this little book for Mike's niece...she's still in college and I hope she likes it! I'm going to give this to her for Christmas along with some other goodies. I think she'll like it. I love that it is made with one 12x12 sheet.

"Fried" Chicken

Happy Foodie FRIDAY!!!!
I have a great recipe to share today!!! This is also adapted from Hungry Girls 300 Under 300 cookbook!! YUM! Everyone loved this....especially Mike and the kids!!!! Now that is saying something!!!

Here is the revised recipe - please log into her blog at HungryGirl.com for the official recipe - I also put it below. I like mine a little less coated....I know, I'm weird. So. What. :)

"Fried Chicken"
8 chicken legs - skin removed
Fiber One cereal - ground to make powder - I keep this in a container so I'm not sure how much to start with; I'd say about a cup
Seasonings - whatever you like - I used Garlic Powder, Cajun seasoning, and salt about 2 t each
1/2 C egg beaters

Mix cereal and seasonings together in a ziploc gallon sized bag.
Take the chicken and coat it in the eggs then add it to the bag. Do the shakey shake and put coated legs (hey now!) on a foil lined cookie sheet sprayed with Pam.
Bake at 400' for 20mins then flip and bake 20 more.
Serves 4 - two legs each.

I promise you, Mike LOVES chicken from the colonial and said that this is almost as good!!!! WOW!!!

Ingredients:
6 raw chicken drumsticks, skin removed
1/2 tsp. salt, divided
1/2 cup Fiber One bran cereal (original)
1 1/4 tsp. black pepper
3/4 tsp. garlic powder
3/4 tsp. onion powder
3/4 tsp. dried oregano
1/4 tsp. chili powder
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
Optional: additional seasonings, to taste

Directions:Preheat oven to 400 degrees.

Spray a baking sheet with nonstick spray and set aside. Season chicken with 1/4 tsp. salt and set aside.

Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Transfer crumbs to a large sealable plastic bag. Add remaining 1/4 tsp. salt and all other seasonings. Seal bag and shake to mix. Open bag and, if you like, season crumbs to taste with additional seasonings. Set aside.

Place egg substitute in a wide bowl. Two at a time, coat drumsticks in egg substitute, gently shake to remove excess liquid and place in the bag with the crumbs. Seal and shake to coat. Transfer crumb-coated drumsticks to the baking sheet and repeat with remaining drumsticks.

Bake in the oven for 20 minutes and then carefully flip. Bake for another 15 - 20 minutes, until crispy and cooked through. Enjoy!

Oh my. These were FUN to make! :)
I started with bags of tea - I enjoy tea and love TAZO and Stash brands....Blueberry is one of my faves! And this is the perfect time of year to sip it! I have seeen these sliders on other bligs and think it's pretty amazing that they actually work! : ) I love it!
I gave them to co-workers...Happy October!

I made this out of empty toilet paper rolls! I just flattened them and cut CS to size and used my chomper to punch a hole and added a ring....FUN! AND SPOOKY!! :)

Foodie Friday - Crockpot Bean Soup

Please don't think this is your everyday bean soup...I love me some bean soup, but this isn't creamy like that. It is chicken broth based and it is delicious! I based this on a Hungry Girl recipe called What's Shakin' Beany Bacon Soup. I changed it up though and cooked mine in a crock. This is what I did...

Bean/Sausage Soup:
1 large jar (32 oz?) of great northern beans (not Sam's club large; just grocery store large - the one in the glass jar)
1 bag (10oz?) of baby carrots
2 heaping spoonsful of chicken stock base - you could also use boullion but I like to buy a jar of this at Sam's and have it on hand - it is a really good stock base!
1 large onion
2 t.Rosemary
2 t.Thyme
1 lb crumbled turkey sausage (I cheated and used the packaged pre-cooked kind - easy, peasy!)
fresh spinach - hard to tell how much I grabbed three handfuls.

Put beans in crock and then rinse jar and add stock base to jar and fill about 3/4 full of water. Shake until base is dissolved and add to crock. Roughly chop onion and add that to crock along with carrots, rosemary and thyme. Set crock up for cook on low for 8 hours. Add spinach and let sit in crock for about 15 mins or until spinach withers a bit. Enjoy!!!!

This is a great fall soup and my family all enjoyed it with homemade bread. My son and I also added some hot sauce....yum! :)

The Witch Was Framed

Hi!! Isn't she awesome!!??!! I just love her... I think she is perfect for Halloween! I bought this jar at the Dollar Store! (LOVE IT!) And then I just cut her using my gypsy. I think she's about 2.75 inches tall. I blinged her up a bit with stickles and tied a tulle bow around the jar and stuck her on with a bit of hot glue. I just stuck her on the bow and I'm thinking that I can use her on my desk at work filled with goodies and just cut the ribbon and change it every month. Sounds like a plan...let's see if I follow through! I filled her up with Candy Corn. Mmmm!

Anyway, how cute is this!?!?! I LOVE it! SO cute. The frame is a wooden one from Michael's. It was $1! I painted it green. Added 125 googly eyes and orange stickers. I would have added more eyes only i didn't have more....I used the whole bag! I had the stickers in my stash.

Turned out really cute, don't you think?!?!

I found this cute fold online. You just use a 4 1/2 x 12 inch piece of cardstock and score it at 4.5" and 9" that gives you a square 4.5" card and a 3" wide bookmark. FUN! :)

Hi all and thanks for reading my week long post about my son's Rock Climbing Party!!! :) It was a great time and since it's also Foodie Friday, I thought I'd focus a bit on the food! :)
My BBFF, Christy, http://christyrobbins.blogspot.com/ ( who is also a STAR on Good Morning Texas!) suggested a trail mix bar. What a fun idea!!

Rockin' Party Day 4

Whew! What a great PARTY!!!! We all had a great time and Al was one happy Rock Climber!

I matched them with some Halloween paper pack and SU! ribbon and voila! :) I sent out 25 cards in one day - almost like Christmas cards! :) I made two of almost each design and made 12 designs, Fun! :)

I really got some help with today's post. I really didn't do anything but put the fondant on! :) I am proud of myself because I usually try to do it all and then get upset with myself for not ever getting everything done that I intended. This party was not like that. Mostly because I realized that I didn't have to do it all and could get help...I got help!
Sam's Club made the Cookie (Al doesn't like cake?! I know, he needs to get his mind right). The cookie is not one, but DOUBLE layered! Yes, that means cookie, icing, cookie and more icing!!! Yowza!!!! That equates to exactly 9,356 calories per square inch. Glad only a couple kids are staying over!
Thanks agian, Rosy! This will NOT be the last you see of her work!!! I promise!!
