Foodie Friday....Cheesecake Cake Batter Cuppies


Happy FOODIE FRIDAY!!!  :)
Today I am going to post the recipe for my fave cuppies yet!!! :)  OMG!!! These are delish and YOU HAVE TO TRY THEM!!!!!!!!!!!!!!!!!!  :)
Yes, that's an order.  They aren't that hard, heck if I can do it, you can too!!!

I originally got the recipe from one of my fave blogs.  Confessions of a Cookbook Queen.

Here is my addaption to the recipe.  Next time I may actually try to do it according to the directions, but these turned out sooooo good I may not.  :)  Although, I'm sure her way is fab!



Confetti Cheesecake Cupcakes with Cake Batter Cream Cheese Frosting
INGREDIENTS
white cake batter - that means make it according to the directions
8 oz package cream cheese, softened
1 egg
1/4 cup sugar
1/2 teaspoon wedding cake flavor (OMG!  This is fab!  The cookbook queen used baker's mystery flavor, also found on Amazon. And you could use plain ol' vanilla if you don't want to mess with this.) I love wedding cake and when I looked online for the mystery stuff she'd recommended I found this so I got both and will try the other, but had to try this one first!!! :) 

Preheat oven to 350 and line 24 muffin tins with liners. 

Make cake according to pkg directions then add the other ingredients.  Bake for about 17 minutes or until set.


Cake Batter Cream Cheese Frosting:
1 stick salted butter, softened
8 oz cream cheese, room temperature
1/2 teaspoon vanilla
1 teaspoon wedding cake flavor (you could omit this, or use vanilla, but again, I really like this!)
3 cups powdered sugar
1/2 cup white cake mix (MIX--NOT BATTER)


In the bowl of a mixer, beat butter, cream cheese and extract(s) on medium speed until smooth. Add powdered sugar and cake mix and beat on low until just combined. Increase speed to medium-high and beat for 2 minutes. If frosting is too thick, mix in a bit of heavy cream or milk until desired consistency is reached.

Frost cuppies once they are cooled!  WOW!!  I even got a cake decorating kit from Amazon when I was purchasing the flavoring and got to use that.  :)  YAY, ME!!!  I hadn't ever done that before!
