Seafood Lasagna

Oh MY!!!  This is Devine!!!
I am closing this month with another fave recipe!  Please try it and enjoy - it is both my BF's and my daughter's favorite meal! 
:)

Seafood lasagna

Ingredients
9 lasagna noodles – I use the ‘no boil’ kind
¾ pound each – scallops, shrimp, crab (imitation crab is a-ok!)  You can use more and can chop it if you want to. 
1 stick butter
1 jar alfredo sauce
¾ C milk
Parmasean cheese about 1 cup
2 cups mozzarella cheese
Pinch of nutmeg
1 package frozen, chopped spinach – defrost and get water out
Garlic to taste
1 C cottage cheese
2 T flour


In one saucepan saute ½ stick butter with seafood
In second pan melt the other ½ stick of butter, whisk in flour and slowly add milk.  Add parmesean to that to make alfredo. 
Pour a little of the premade alfredo on the bottom of your lasagna pan and spread it around.  Add the rest of the jar of alfredo to your mixture on the stove  ( this just gives it a little extra and is yummier than just my alfredo, but if you want to make it all, go for it!)   I add the cottage cheese, spinach, and nutmeg to the alfredo to eliminate too many pans. 

Layer – noodles (3), sauce seafood….I do this for 3 layers then top with Mozarella  (I only layered the seafood on two layers though because I ran out.  Bummer. 

Bake 350 degrees for about 50 minutes covered with foil then for another 10-15 uncovered to brown the top.  Let it sit a bit before cutting to get the perfect squares.

YAY!!  Today is my BF's birthday!!!  I made something really special for him.  He loves, (and by loves I mean looooooves) Star Wars.  Boys.  Weird.  I've never even seen the movie even though I've told him since the beginning of our relationship that I would.  He knows it's not my thing, and hasn't ever asked me to.  I do love him for that.  I do, however, have loads of SW figures/toys/etc in my house.  :)  What's a girl to do?  I have my toys; he has his!  Anyway, I know that he will enjoy these!!!  I will have them all up so when he gets home from work he will see them!  :)
I love me some MIKEY!!!

Busy, busy, busy!

Hi my friends!!!  I love my craft...I SO do!!  It sure keeps me busy and entertaied.  I just love it!  I am also happy with my decision to start selling some of my things.  It has been successful so far...YAY!!  And I hope it keeps growing.  Any ideas to help, I will listen!  :)
I was asked by a friend to make a gymnastics 8x8 scrapbook for his daughter. It is so sweet of him....he ordered the book as a suprise for is daughter and wife - what a sweet guy! 
SO - I have been busy, but I got it done and he said that they LOVED it!  His exact words were, "She was floored by it.  It was a homerun! :) )That makes me one happy crafter!

What does that mean for you, you ask??  Well, tons of pictures, of course!!  This is waht I have been busy doing.

Paperbag Scrapbook

Hi y'all!
To continue this month of my favorite things I have to get down to basics.  Scrapbooking!  Oh how I love it.  I love remembering special times and getting to relive them almost when I scrap my memories.  I also love to touch and feel the paper and put it all together.  Scrapbooking is what began my love for all things paper.  I started when my daughter (now 13) was born and I was on maternity leave.  I used an old 3-ring binder and covered it with fabric then used page protectors and construction paper - some cardstock  and stickers, sticker, and more sticers.  I loved it.  I was hooked!  Even though I did take a long break. Which I tend to do from time to time.  I am totally OCD and have to scrap chronologically so when I come to a point that I'm kinda stuck sometimes it takes me a while to start again.  This is a nightmare because I take a bunch of pictures!  I'm a real shutterbug.  So.....I often get behind.  Right now I am scrapping July 2010.  So I guess that's not horrible.  It can sometimes be a bit overwhelming though.  I have to tell myself that it's most important to just get the pictures on the page so I dont' stress too much really.  I am a pretty fast scrapper to so I can get a lot done when I try. 
Anyway, for my daughter's cheer coach I made a cute paper bag scrapbook.  Here are lots of pictures...enjoy!  :)

Love me some Digis!!


I couldnt' go the month without saying how much I love digi's!!  I'd never used them before this year, but I do love them!  They are fabulous - Especially when you have COPIC markers to color them with!!!!  (Thank you Mikey for the wonderful b-day present!!!  xxoxoxx)

Love me some card club


Hi crafty friends!
Also yay...it's my bday month and I am sharing things that I love.  I have to say that I love me some card club! Are any of you in one?  The way mine works is that I have a SU! pimp (LOL) that I along with a few others purchase from every month.  Enough to make it qualify as a party each month and then we get together at her house - whis is FAB for scrapping - she has tables set up downstairs and is surrounded by stuff!  Heaven!  She teaches us a new technique and we make 3 things - usually 2 cards and something else.  Always really neat.  I've never left there having not been taught something!  I really like to go and have fun while I'm there.  She draws names for one person to get a stamp set each month.  She also gives us all a little treat each month that coordinates with what we've learned.  It's really nice and I'd love to eventually have the space to do that myself!

Dreaming.....

Okay, back to reality.  Until then, I'll just continue to enjoy myself at her place!  :)  Thanks, Deb! 

Here are some cute cards we made in February.  It is quilting - which is super easy!  Cut twelve 1-1/4" squares and place them on a card front.  Make sure they are close together and it's fun to play with patterns then run them through a cuttlebug to emboss.  We used the lattice embossing template.  I think they turned out really cute!




Oh and this cute box!!!!  Also stamped using a roller on the tissue paper!!  Super cute!  :)



Enjoy today and find a club near you if you are interested!  They are fun!!!  My only suggestion would be to make sure the person has been scrapping for a while as one time I joined a club and I spent most of the time teaching the new to scrapping and card making instructor which was kinda a bummner.
